Turning Dreams Into Goals

I have set some pretty big goals for myself! They were once dreams but I have now put a plan in place and a deadline!! Here we go to crushing those goals!

Trying "new" Foods

So I am definitely one those people who orders the same thing every time at a restaurant, eats the same style dinners, never changes anything up, and I definitely don't try new foods very often! BUT my mom came to visit and brought squash! I of course gave her the typical eye roll and thought I'm not eating squash! Yuck! Well, of course like all moms do she insisted on making it. I tried it and WOW! I  think this girl has a new favorite!! Guess I need to try new foods - never know what I might be missing!!!! Oh and did I mention it was super easy to make??


This got me thinking about trying new things! This applies to so many aspects within our lives! Sometimes we need to step outside of our comfort zone to find something we've been missing! You never know - it just might be the next best thing in your life! Do something different today!

Grilled Steak Salad with Tomatoes & Avocado

{Smart Eating with a Fast Fix}

My family and I loved this recipe!!! It was easy and quick plus it's healthy!!!! We will definitely be making this again!




Time: 30 minutes
Makes: 12 servings

1 beef top sirloin steak (1.25-1.5lbs thick)
1 Tbsp. olive oil
3 tsp. Creole seasoning
2 large tomatoes, chopped
1 15oz can cannellini beans or white kidney beans
1 15oz can black beans (I used pinto beans instead)
3 green onions, chopped
2 tsp lemon juice
1/4 tsp. salt
1 medium ripe avocado, peeled and cubed

1. Rub both sides of the steak with oil and sprinkly Creole seasoning. Grill, covered, over medium heat or broil 4 in from heat 5-8 minutes on each side or until meat reaches desired doneness. Let stand 5 minutes

2. In large bowl, combine the tomatoes, beans (rinsed and drained), green onions, lemon juice, and salt. Gently stir in avocado. 

3. Cut steak into slices and serve with bean mixture.

Celery Boats

Celery Boats are a great little snack with some protein. 







Take a few celery sticks and add your favorite nut butter (I used almond butter) then add a few raw almonds, peanuts, or cashews to the top! Easy snack and healthy! 

Do it for YOU!

I started thinking about why I started working out and what made me decide to focus on myself....Was it the person I saw looking back in the mirror? Was it my husband? Was it my kids? Was it that bathing suit sitting in the drawer that was looking back at me? Was it the scale? What was it?

I know all of these played a role in me deciding to lead a more healthier life. I wanted to look in the mirror and be proud, I wanted to be in good shape for my husband who is a workout junkie, I wanted to have more energy for my kids, I wanted to get back in that bikini after 3 kids, and I wanted that scale to show me a number I liked. Those all do play roles in my quest to get healthier and fit.

I didn't change my habits or stick to this journey until I realized I was doing this for ME! It was ME who I wanted to do this for! That was the moment when it all clicked and I realized I owed this to myself! I wanted to be comfortable and confident within my own skin. I didn't want to feel like 3 pregnancies had taken a toll on my body and health. I didn't want the fact that turning 30 this year was an excuse. Ever since I realized I wanted to do this for me it made this journey so much easier! I hold myself accountable for working out and eating right. 

I'm proud to say for a minute I was selfish and did this for ME but in return it has affected all aspects of my life: my husband, my kids, the mirror image, that bikini, and the scale number!

Do something for YOU! Be selfish and put yourself first. YOU DESERVE IT!

Breakfast Casserole

Here is a yummy Breakfast Casserole my husband and I make. We love it because we can make it at the beginning the week and eat it throughout the week. It makes for an easy and time friendly morning breakfast all while still being healthy! :)



-24 eggs
-1 pound of sausage, bacon, ham, or steak (you can even do a combination)
-1/2 green pepper chopped
-1/2 onion chopped
-1/2 red pepper chopped
-1/2 tomato chopped
-10 ozs  fresh spinach
-1 cup of cheese

You really can substitute anything you like - pretty much think of this as an omelette - get whatever you like!! :)


Directions:

-Cook sausage, bacon, steak, and ham
-Sautee veggies on stove
-In Large Casserole Dish (10x14 at least) -Mix in eggs, veggies, and meat (bacon, steak, ham, sausage)
-Bake on 400 for 30-45 minutes - check egg consistency.
-Add cheese on top
-Bake for another 5 minutes to melt cheese

Storage:

Store in fridge and eat during the week! Or use it at a breakfast brunch! :)

I absolutely love how easy this is on us during the week! Definitely makes life easier!

Starting Something New

Starting something new can have so many emotions: excitement, happiness, anxiety, uncertainty, fear, and hope. Everyone has these emotions as they begin something new whether it's becoming a parent, starting a new class, going to a new school, joining a new fitness program, starting a new job, etc. We all experience starting something new each day - when we wake up everyday it is our chance at a new day and the chance to start over. How are you going to make today "new" for you? What can you do to make today better than yesterday?





For me starting this blog is something new. I took time to think about it and had the initial first reactions of "yea right I'm not that interesting." and "what am I going to talk about?" But after getting over those first thoughts I started thinking about how just being myself and writing about my experiences, new beginnings, family, and fitness would be just enough. I decided to jump right in and here I am sitting and having all those same emotions I talked about before but I keep reminding myself new beginnings are what makes for a great journey. Here starts my new journey; hope you are ready!
