Super Saturday & Coaches Night Out

Woooo! It was a great weekend!!! We had our quarterly coach training event as well as our quarterly coaches night out!! We love Super Saturday and actually enjoy "working" on Saturday! Super Saturday is where all the local coaches gather for some team bonding, motivation, success story sharing, and training! It's amazing what a room full of positive and goal oriented people can do for your own self esteem and motivation! You leave Super Saturday ready to WORK!!!

We also had our coaches night out - we celebrate our success and just enjoy each others company! We aren't just teammates, coworkers, colleagues, but we are FRIENDS, FAMILY, AND SUPPORTERS! Who wouldn't want to be a coach?!? Crazy to not want to join in!

Complete Chicken Crockpot Meal - easy of course!

You all know I love my EASY meals!! What mom doesn't? With the back-to-school rush and sports starting up this momma is all for easy & healthy!! Check out this super simple crockpot meal.

Ingredients:

4 Chicken Breasts (frozen or fresh)
1 Bag Green Beans (frozen or fresh)
4-5 Redskin Potatoes (sliced)
1 Packet Ranch Seasoning
1 cup of water


Directions:

Place chicken, green beans, & sliced redskin potatoes in Crockpot.
Mix Ranch seasoning & cup of water
Pour over crockpot mixture.
Cook on low for 6-8 hours (this may vary based on if you are using fresh or frozen ingredients as well as the thickness of the chicken).

Healthy & Easy Fruit Popsicles

Made these yummy popsicles with my kiddos! Easy, fun to make together, and healthy - what more could a momma ask for?!?

Ingredients:


  • 1 cup plain Greek Yogurt
  • 2 TBSP Honey
  • 1 cup of fruit (blueberries, strawberries, bananas, peaches, or even a mixture - we used blueberries)
  • Pop Molds (or you can use little paper cups with tin foil and popsicle sticks)


Directions:


  • In a blender whirl all fruit. Add in 1 TBSP honey.
  • In separate bowl mix 1 cup of yogurt with 1 TBSP honey.
  • Spray molds with a cooking spray to avoid sticking.
  • Pour in yogurt, then some fruit mixture, yogurt, fruit mixture. This will give you layers, you can also do swirls using a toothpick, or just dump it all in together and mix.
  • Freeze for 4 hours.


*If you are using paper cups - fill paper cups, place popsicle stick and cover with tin foil (stick will pop through foil)

Easy & Healthy Lasagna!



Ingredients:
  • 1 lb lean ground turkey
  • 1 small onion chopped
  • 1 small green pepper chopped (optional)
  • 1 28 ounce can of crushed tomatoes
  • 1 3/4 cups water
  • 1 6 oz can of tomato paste
  • 1 envelope of spaghetti sauce mix 
  • 1 egg, lightly beaten
  • 2 cups fat free cottage cheese
  • 2 tbsp grated Parmesan
  • 6 uncooked lasagna noodles (oven ready noodles)
  • 1 cup shredded part skim mozzarella cheese



Directions:
  1. Brown ground turkey, add onions and green peppers - sautee until onions turn slightly brown. (Preheat oven to 350)
  2. Drain the browned meat and onion/green pepper mixture. Add in the tomatoes, water, tomato paste and spaghetti sauce mix. Bring to a boil. Let simmer about 15 minutes.
  3. Meanwhile, combine and mix the egg, cottage cheese and Parmesan cheese in a medium bowl.
  4. Spray a 13×9 baking dish with cooking spray
  5. Spread 2 cups of the sauce mixture on the bottom of the baking dish. Lay 3 noodles on top of the sauce. Add 1/2 of the cottage cheese mixture to the top of the noodles. On top of the cottage cheese mixture, add 1/2 of the remainder of the sauce mixture. Repeat - your top layer should be all meat sauce.
  6. Cover with foil and bake for about 50 minutes. Uncover and add mozzarella cheese. Place back in the oven uncovered for around 15 minutes.
