Ingredients:
- 1 lb lean ground turkey
- 1 small onion chopped
- 1 small green pepper chopped (optional)
- 1 28 ounce can of crushed tomatoes
- 1 3/4 cups water
- 1 6 oz can of tomato paste
- 1 envelope of spaghetti sauce mix
- 1 egg, lightly beaten
- 2 cups fat free cottage cheese
- 2 tbsp grated Parmesan
- 6 uncooked lasagna noodles (oven ready noodles)
- 1 cup shredded part skim mozzarella cheese
Directions:
- Brown ground turkey, add onions and green peppers - sautee until onions turn slightly brown. (Preheat oven to 350)
- Drain the browned meat and onion/green pepper mixture. Add in the tomatoes, water, tomato paste and spaghetti sauce mix. Bring to a boil. Let simmer about 15 minutes.
- Meanwhile, combine and mix the egg, cottage cheese and Parmesan cheese in a medium bowl.
- Spray a 13×9 baking dish with cooking spray
- Spread 2 cups of the sauce mixture on the bottom of the baking dish. Lay 3 noodles on top of the sauce. Add 1/2 of the cottage cheese mixture to the top of the noodles. On top of the cottage cheese mixture, add 1/2 of the remainder of the sauce mixture. Repeat - your top layer should be all meat sauce.
- Cover with foil and bake for about 50 minutes. Uncover and add mozzarella cheese. Place back in the oven uncovered for around 15 minutes.
